Honduras Cerro Azul Coffee

September 26, 2025

With layered sweetness and balanced acidity, were excited to introduce the Honduras Cerro Azul Coffee into our fresh roasted coffee lineup this fall. Fresh roasting coffee in Mammoth Lakes for locals and visitors is an honor we don't take lightly and we hope you enjoy this Honduras coffee as much as we do. For now we are using the Honduras in our specialty blends (Espresso, French, and La Montaña), but look for this to be released as a single origin coffee offering in the near future! Here is a little coffee geek info on the Honduras Cerro Azul

Nestled in the highlands of Honduras, the Cerro Azul region is known for its lush mountains, cool temperatures, and rich volcanic soils—perfect conditions for coffee cultivation. Frequent mist and steady rainfall create a slow maturation process, allowing cherries to develop layered sweetness and balanced acidity. Coffee has been part of this area’s culture for generations, providing both a livelihood and a point of pride for local farming families.

This coffee is produced by COHORSIL (Cooperativa Hormiguitas de Siguatepeque Limitada), a cooperative made up of smallholder farmers dedicated to quality and sustainability. COHORSIL provides training, technical assistance, and shared facilities, which empower producers to improve yields while caring for the land. The cooperative invests in social programs that support education and reforestation, reinforcing coffee’s role as a force for community growth.

This lot is classified as SHG EP – Strictly High Grown, European Preparation – meaning it is
grown at altitudes above 1,200 MASL and carefully sorted to remove imperfections. The
high elevation leads to dense, flavorful beans, resulting in a clean, sweet cup with excellent
structure.
